SIMPLE EGGS ON CORIANDER
1 bunch coriander leaves chopped with stems
2 green chillies chopped fine
1/2 tsp ginger/garlic paste
6 eggs
1 tsp fried onions (optional if handy)
salt and pepper
fat - 1/2 clarified butter/1/2 extra virgin olive oil
For the hearty eater a breakfast for any day of the week if you are at home and need not go to work. For light eaters a quick and easy to put together dinner for when time is of the essence.
Take a non-stick pan and add the fats. Put in the ginger garlic paste and stir fry for a minute or so.
Add the chopped coriander chillies, onions and salt and pepper. Stir fry for another couple of minutes. Flatten the surface and drop the 6 eggs on top one by one. Cover and cook till the eggs are set. Serve immediately.
This is what we ate for breakfast this morning.
