225 gms plain flour
100 gms rice flour
125 gms olive oil and 100 gms walnuts gently pulverised in a grinder
100 gms caster sugar
a little extra caster sugar for dredging
Grease and line a round 12 inch tin. Sift the flour and salt and add all the ingredients. Knead it lightly to mix and roll it out in a circle. Press into the tin and bake for about an hour on gas mark 4. When it begins to look lightly colored remove and dredge with sugar and cut into portions.
