Serves 12 or more
Preheat oven to 350*
  •  2 sticks salted butter, softened
  • ½ cup powdered sugar
  • 2 cups flour
  • ¼ teaspoon salt
 Combine the above well, until a soft dough comes together. Press into the bottom of a 13×9 baking pan which has been sprayed with non-stick spray (or use a non-stick pan). Bake for 20 minutes.
 In the meantime, beat together:
  •  4 eggs
  • 2 cups granulated sugar
  • ¼ cup flour
  • Zest of 2 lemons
  • 4 Tablespoons lemon juice
Remove crust from oven, and pour the lemon mixture over it. Return to oven and bake for 20 more minutes. Dust with powdered sugar, and cool before cutting and serving.

These are quite rich—I usually cut into 20 squares.
