AROMATIC RICE WITH MUSTARD FISH

AROMATIC RICE WITH MUSTARD FISH RICE
2 CUPS BASMATI OR ANY OTHER RICE
½ TEASP CUMIN SEEDS
2/3 CLOVES / 1 INCH STICK CINNAMON / 2 GREEN CARDAMOM
½ TEASP FRIED ONION / SALT TO TASTE
WATER
METHOD : take a covered glass dish and place the washed rice in it. Add all the above ingredients and enough water. Cover the dish and place in the microwave
and cook at 70% till done. Remove the dish from the microwave and leave in a warm place till ready to serve.
FISH CURRY
½ KG BONELESS FISH CUT INTO 2 IN CUBES
FISH MARINATION MASALA :
GRIND EQUAL AMOUNT OF GARLIC, GREEN CHILLIES, CUMIN SEEDS AND USE 2 TABLESPOONS OF IT
½ TEASP TURMERIC
½ TEASP CORIANDER POWDER
½ TEASP CUMIN POWDER
½ TEASP PEPPER POWDER
½ TEASP RED CHILLI POWDER
JUICE OF ONE LIME
1 TABLESPOON OLIVE OIL
SALT TO TASTE
2 TABLESPOONS BIG BLACK MUSTARD SEEDS ] GROUND TOGETHER
1 TABLESPOON POPPY SEEDS ]
10 CASHEW NUTS ] WITH VINEGAR
1 TETRAPACK COCONUT MILK
1 HEAPED TABLESPOON FRIED ONION
METHOD :
IN A GLASS SERVING DISH PLACE A LITTLE OLIVE OIL ,THE FRIED ONION
AND THE GROUND MASALAS. MICROWAVE ON HIGH FOR FIVE MINUTES.
ADD THE MARINATED FISH AND COCONUT MILK AND MICROWAVE AT 50%
FOR ANOTHER TEN MINUTES. LET STAND FOR A MINUTE AND SERVE WITH THE RICE.
