HERBED POTATOES

HERBED POTATOES
1 KG POTATOES / 1/2 CUP CHOPPED PARSLEY / SALT & PEPPER
2 TABLESPOONS THICK FRESH CREAM / 1 TABLESPOON EXTRA VIRGIN OLIVE OIL / 1 TABLESPOON CREAM CHEESE / 2 CUPS MILK
Dice the potatoes into medium pieces. Take a non-stick pan and pour in the milk and about half a glass of water. Add the chopped potato, a little salt and 2 drops of oil and simmer and cook till almost all the liquid has evaporated and the potatoes are done. Then add the butter , cream,cream cheese, parsley, salt and pepper and a chopped green chilli. Cover and leave on a low flame for the flavours to come together.

    I thought I'd send you a very easy and very tasty potato recipe (I learnt it from a friend.) You can post it, if you like - maybe you'll even improve it.

    Ratan's lasun aloo:

    Boil and dce potatoes. Add salt to taste.

    Grind red chillies with garlic (approximately even proportions, and in amounts that depend on the amount of potatoes you're cooking).

    Fry masala in oil, add potatoes, stir 2 mins or so, add water and cook down to a thick coating consistency. Sprinkle lots of kothmir, and serve with lime on the side.
