COOKIES - NUTTY OATMEAL
1/2 CUP CHOPPED WALNUTS AND ALMONDS
1/2 CUP ROLLED OATS
175 GMS BUTTER OR HOME MADE CLARIFIED BUTTER
125 GMS CASTER SUGAR
1 EGG YOLK
175 GMS PLAIN FLOUR
1 TSP BICARGONATE OF SODA
PINCH OF SALT
Using an electric beater, cream the butter and sugar together until light and fluffy. Add the egg yolk next.
Sift the flour , soda and salt and stir into the butter mixture. Add the oats and the nuts and chill the dough for abt 30 minutes.
Place the dough in balls with a spoon on a baking sheet and flatten with the back of the spoon. Bake till they are golden. Cool completely before storing.
