COOKIES - RICH FREEZER BISCUIT
150 GMS CHILLED BUTTER, DICED
200 GMS CASTER SUGAR STORED WITH VANILLA BEAN
200 GMS PLAIN FLOUR
2 TEASPOONS BAKING POWDER
A PINCH OF SALT
1 EGG, BEATEN
Beat the sugar and butter till light. Add the egg a little at a time. Sift the flour with the baking powder and add a little at a time till it is incorporated. Place the dough on a piece of foil and shape into a roll .Freeze for at least 30 minutes. Unwrap the dough and slice as many biscuits as you want, using a serrated knife. Place the biscuits on a tray and bake for about 10 minutes or until they are golden. Leave standing for a couple of minutes to firm up , then transfer to a wire rack to cool.
