PRAWN COCKTAIL

A simply superb start to a meal........if made well !! And by well I mean that the prawns should not be either under or overcooked. The mayonnaise should be just right...... niether too tart nor too sweet. It should be chilled just right. If all of this falls into place you have a culinary delight on your hands which words are not enough to express. It simply must be tasted.

200 / 250 gms shelled prawns

3 tablespoons mayonnaise

2 1/2 tablespoons tomato ketchup

2 tablespoons single cream

salt, pepper and a little lemon juice

1 head of lettuce, washed and cut fine

Lightly saute the prawns in a non-stick pan with a wee bit of olive oil. Cool

Mix in all the seasonings. Layer individual serving bowls with a little lettuce and pour on the prawn mixture on top. Keep chilled till ready to serve.
