JACKET POTATOES WITH SOUR CREAM DRESSING

These can be made in a jiffy in a microwave.
6 medium sized potatoes (soak for 1/2 hour in water)
1 small cup yogurt
2 tablespoons thick cream
1 tablespoon plain or flavoured cheese spread
a little chopped parsley
salt

Place the yogurt in a sieve for a while to allow the whey to drain out. Add the cream, cheese spread, salt and parsley and let stand till ready to use.
Clean and scrape the potatoes till clean. Poke the potatoes with a fork and apply some oil and salt. Wrap in a sheet of butter paper and microwave on high for 4 minutes. Leave in the microwave for a few minutes longer. Remove and cut in halves. Scoop out a wee bit of potato. Place the sour cream and sprinkle a few chilli flakes and oregano and serve immediately or keep in a warm oven till required.
