Sweet potatoes are one of the most nutrient dense vegetables. These roots help prevent cancer, degenerative eye disease, depression, heart disease, etc. as they are vibrantly coloured with carotenoids and filled with fiber.
They contain :
Beta-carotene - an exceptionally rich source - one sweet potato contains 187% of the recommended intake of beta-carotene. Necessary to prevent certain cancers stomach, pancreas, mouth, gums and macular degeneration.
In addition they contain caffeic acid, chlorogenic acid, insoluble fiber, vitamin C. vitamin B6, potassium, plant sterols, lutein and zeaxanthin all of which bolsters our immunity.
There are many unusual ways to use sweet potato. I am giving you a few.
1) Wash and cut sweet potato into thin slices. Drizzle with olive oil and bake till done.
2) Add slices of cooked potato to savoury sandwiches.
3)Mash sweet potatoes with maple syrup or honey for an unusual dessert.
