Better known as cheese balls.....these are very easy to make and taste good too. This recipe calls for mozzarella cheese.....though having made them for many many years I know that a strong cheddar works very well too as personally I am not too fond of bland food. You may also go half mozzarella and half cheddar.
500 gms grated mozzarella cheese
1 1/2 cups flour
1/2 cup cornflour
4 tablespoons snipped fresh chives
1/2 teaspoon pepper
2 eggs
oil for frying
Combine all the ingredients and chill. Shape into balls and fry.(Add a little baking powder for a fluffier croquette).
For a fancy finish keep some of the flour and cornflour aside. Roll the balls in the flour - chill - then fry.
