CHICKEN FINGERS - 'OVEN FRIED'

when food is as tasty as this ....who needs deep fried food ???? At the same time do not cut fat totally out of your system......just change bad fats for good fats most of the time........but eat some bad fats all the same. You need your body fighting fit . 4 CHICKEN BREASTS CUT INTO 2" SIZE Pieces

Make a marinade of : 1 cup low fat curd
1 tablespoon fresh cream
1 tablespoon extra virgin olive oil
1 onion minced fine
2 teaspoons red chilli powder
1/2 teaspoon pepper powder
1/2 teaspoon thyme (fresh o dried)
1/2 teaspoon salt
1 tablespoon mustard paste
1/2 tablespoon honey

Mix all of the above ingredients and add the chicken pieces. Keep for an hour in the fridge.
Take each piece of chicken with as much marinade as it will hold and coat in a mixture of coarsely crushed cornflakes and some oats. Place on a baking sheet and bake in a hot oven till golden. Tastes deliciously moist.
