1 CUP WATER
5 OZS FLOUR
3 OZS BUTTER
PINCH OF SALT
DRY GRATED CHEESE FOR GARNISHING
Place the butter and water in a pan and boil together. Add the flour and salt and stir well on the fire. Cook till the mixture leaves the sides of the pan and forms a ball. Cool. Beat the eggs and mix gradually into the dough till the mixture becomes smooth and glossy and stiff enough to hold a shape in a little mound. Place large dots on a baking sheet or pipe. Bake in a pre-heated oven for 15 minutes until crisp and golden. Cool and slit open with a sharp knife and fill with a little savoury cheese. Sprinkle with the grated cheese and serve.
