ROSTI - PARSI STYLE
I am writing this little recipe, a favourite of all parsis, something they throw together when they are feeling lazy to cook or when unexpected guests drop by and you need to add to the dinner.
AND THE SURPRISING PART IS that with little variations how similar is world cuisine.

1 packet fried potato straws
1 onion chopped fine
2 tablespoons chopped coriander leaves
2 green chillies chopped fine
1 pinch of pepper and red chilli powder
1/2 cup milk
eggs - as many or as little as you want (I'll explain.....they may be broken whole, close to each other or a few may be beaten and poured over)

In a wide shallow non-stick pan (grease the base with a little bit of olive oil)place the potato straws, onion, coriander leaves, green chillies and the spices. Stir fry all the ingredients for a couple of minutes (you will find the potato straws release their fat).Pour in the milk, flatten, add the eggs any which way you like and cover to cook. Slice and serve garnished with a few chopped coriander leaves. 
It is deliciously tasty, simple to make and a hearty meal.
