OVEN ROASTED SWEET POTATOES & GARLIC
8 CLOVES GARLIC, UNPEELED
2 TEASPOONS ROSEMARY LEAVES
1 KG SWEET POTATOES, SLICED
1 1/2 TABLESPOONS OLIVE OIL
Combine the oil, garlic and rosemary in a large bakind dish. Heat in the oven for five minutes. Add the sweet potatoes and bake, turning occasionally, until tender. Sprinkle with a little salt to taste.

Num! This sounds like a great recipe to use up my sweet potatoes and remaining rosemary!
