SEV (PARSI SWEET RELISH)

SEV AS WE CALL IT ARE VERY VERY FINE NOODLES ALMOST THREADLIKE IN THEIR THICKNESS. THEY ARE AVAIABLE IN PACKETS SOMETIMES IF YOU ARE LUCKY YOU MAY FIND THE PRE-ROASTED PACKETS TOO WHICH MAKES LIFE SO MUCH EASIER FOR THEN YOU NEED TO FRY THEM FOR A SHORTER TIME.

1 PACKET SEV
SOME CLARIFIED BUTTER 
SUGAR TO TASTE
SOME NUTMEG AND CARDAMOM POWDER
SOME ALMONDS SLIVERS AND RAISINS 

WARM THE BUTTER AND ADD THE ALMONDS AND RAISINS FOR A MINUTE AND REMOVE INTO A BOWL FOR USING AS GARNISHING.
ADD THE SEV TO THE BUTTER AND KEEP STIRRING ON A LOW FLAME TILL IT IS A GOLDEN BROWN. BRING THE PAN DOWN FROM  THE FIRE , ADD IN THE SUGAR AND SOME WATER AND RETURN THE PAN TO THE FIRE. COVER AND ALLOW TO SET. SPRINKLE  THE CARDAMOM AND NUTMEG POWDER AND MIX. ADD THE GARNISHING AND SERVE.
