1 lb Kaleji(LIVER), Fefsa (LUNGS), Gurda (KIDNEYS) etc
6-8 dried red chilies,
1 tbs coriander seeds,
1 tsp cumin seeds.
Gently roast the above in a pan and then grind to a fine powder in a grinder.

1/4 cup ghee/oil,
2 sliced onions
6-8 cloves of garlic paste,
4 ripe tomatoes (chopped),
salt to taste,
3-4 green chillies (chopped)
2 potatoes cut into small cubes .... same size as offal pieces
Heat the ghee in a pan, saute onions, add the garlic and saute until light golden brown.
Add the powdered masala of chillies, cumin and coriander, stir and immediately add the tomatoes so masala won't burn.
Now add Khurchan and potatoes and salt. Mix well and cover and simmer for 15-20 mins. There should be some gravy left after cooking.
