MALIDO - A PARSI SWEET

Authentic (original) OLD style Malido:

1 lbs semolina/farina/ravo
1 lbs wheat flour
2 lbs sugar
1 tsp salt
2 cups water
4-6 eggs
3 tbsp ghee/butter
1/4-1/2 lb of nuts(almonds, cashews) or less
dry fruit pieces
raisins
1 tsp cardamom powder
1/4 tsp nutmeg powder
1 tsp vanilla essence
Can add saffron to it also

1st you have to make rotlis and cook it

For rotlis:
Mix flour, semolina, salt and water and knead the dough. Divide equally in to 4-6 parts. Knead each one well and roll it out like rotlis not too thin. Make all rotlis and deep fry in ghee. Cool at room temp and break(crush) it up in to fine powder as much as you can.
Make syrup with dissolving sugar and water on low heat, one thread syrup.
Now add rotlis powder(crushed) And add to syrup and keep mixing til it is all well mixed and all comes together. Add cardamom and nutmeg, vanilla essence, saffron.
Now beat up eggs and slowly add to the mix and keep mixing and all will come together and you will see ghee float separate from Malido.
You can fry broken or sliced nuts and dry fruits and raisins. and top it on Malido and serve it with Papri/Puri.
