FOR PESTO ... FEW CLOVES GARLIC
ABT 15 ALMONDS / 1 PACKET BASIL
PULSE IN EXTRA VIRGIN OLIVE OIL.
FOR MINCED LAMB
COARSELY POUND MUTTON
1 ONION FINELY CHOPPED
2 TOMATOES PUREED
SOME GARLIC PODS
RED CHILLI POWDER
SALT / PEPPER
FRY THE ONIONS ... ADD THE GARLIC AND THE MINCE, SALT AND CHILLI POWDER AND TOMATO PUREE AND COVER AND COOK.
SOME WHITE WINE AND GRATED CHEESE
SOME RED OR YELLOW PEPPER CHOPPED FINE
ASSEMBLE :
BOIL THE PASTA AL DENTE. PLACE IN A GLASS DISH AND MIX THE PESTO WITH IT. ADD WHITE WINE AND COVER WITH GRATED CHEESE. POUR THE COOKED MINCE OVER AND GARNISH WITH CHOPPED PEPPERS.
